Crispy roasted baby Yukon gold potatoes with garlic and parmesan

Ingredients

  • 2 lbs baby Yukon gold potatoes (halved)

  • 3 tbsp olive oil

  • 4 garlic cloves, minced

  • ½ cup grated parmesan

  • 1 tsp kosher salt

  • ½ tsp black pepper

  • 1 tsp Italian seasoning

  • Fresh parsley (optional)

Instructions

  1. Preheat oven to 425°F.

  2. Toss potatoes with olive oil, garlic, salt, pepper, and seasoning.

  3. Arrange cut-side down on baking sheet.

  4. Roast 30–35 minutes until golden and crispy.

  5. Sprinkle parmesan during last 5 minutes of cooking.

  6. Finish with parsley before serving.
