Honey Dijon Glazed Pork Tenderloin

Ingredients

  • 1-1.5 lb pork tenderloin

  • 2 tbsp olive oil

  • Salt & black pepper (to taste)

  • 3 tbsp Dijon mustard

  • 1 tbsp whole grain mustard (optional for texture)

  • 2 cloves of garlic (minced)

  • 1 tbsp apple cider vinegar

  • 1 tsp paprika

  • 1/2 tsp thyme (or italian seasoning)

Instructions

  1. Preheat oven to 400°F(204°C)


  2. Trim any silverskin from the tenderloin and pat dry with a paper towel. Season generously with salt, pepper, and paprika.


  1. Sear for flavor


    Heat olive oil in a skillet over medium-high heat.

    Sear the pork on all sides (about 2-3 minutes per side) until golden.


  1. Make the glaze


In a small bowl, mix:

  • honey

  • Dijon mustard

  • whole grain mustard

  • garlic

  • apple cider vinegar

  • thyme


  1. Roast


Transfer pork to a baking dish and brush generously with glaze.


Bake at 400°F(204°C) for 18-22 minutes, brushing more glaze halfway through. Pull it out of the oven when the pork reaches 140°F (Juicy, slightly pink center).


  1. Rest & slice


Remove from oven and let rest, lightly covered, and let rest for 5-10 minutes before slicing into medallions.
