1 tbsp whole grain mustard (optional for texture)

1 tbsp apple cider vinegar
1 tsp paprika
1/2 tsp thyme (or italian seasoning)
Instructions
Preheat oven to 400°F(204°C)
Trim any silverskin from the tenderloin and pat dry with a paper towel. Season generously with salt, pepper, and paprika.
Sear for flavor
Heat olive oil in a skillet over medium-high heat.
Sear the pork on all sides (about 2-3 minutes per side) until golden.
Make the glaze
In a small bowl, mix:

garlic
apple cider vinegar
thyme
Roast
